Corned Beef and Cabbage
Ivy and Slarti have been talking about Corned Beef recipes for tomorrow and I remembered I have a REALLY easy recipe for it that I haven’t made in a long time. It is really good and not as intimidating as some others. This recipe came from a sweet lady I’ve gone to church with for years, JoAnn.
Cover bottom of dish with sliced potatoes. Add chopped onions as desired and 1/2 cup water. Microwave for 12 minutes. Crumble can of corned beef on top; Add 1/2 chopped cabbage and 1/2 stick of butter. Microwave 6 more minutes. And that’s it.
I’m not much on doing more in the microwave, other than heating stuff up, but, this is really good. Especially if you want a touch of Irish this weekend and don’t have time to boil the brisket and all.
